Traditionally Sake is not aged for very long, usually about 6 months to 1 year. At Nøgne Ø we try and provide freshly pressed, or Shiboritate, Sake to provide the maximum amount of fresh and robust flavours. All of our Nama Sakes that have been stored properly will maintain this fresh pressed liveliness for a long time. Our pasteurized version, the Junmai Shu, will mellow and mature in a different manner but with subtle and pleasing results.
